A no meat spaghetti sauce

This is a good recipe if you don't have any meat on hand to add to your sauce, or if you just don't want any meat. I like the added vegetables. All the healthier

Ingredients:

1 med. onion
1 carrot
1 stalk of celery
2 cloves of garlic
2 tbsp. olive oil
1 can (28 oz.) whole tomatoes & puree
1 small can tomato paste with equal water added(optional, but gives a better consistency)
3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1/2 tsp. basil
dash thyme
dash rosemary
dash sugar
1 bay leaf
1 cup water

Chop the following, finely in blender: onion, carrot and celery.

Chop garlic the same, but separately. Saute onion in oil until tender. Add garlic, carrot and celery and cook until tender.

Add tomatoes, water, salt, pepper, basil and bay leaf. Bring to a boil, then simmer uncovered for 10 minutes.

Simmer 15 minutes. Will thicken if chilled overnight, and almost always better the next day.

Spaghetti Sauce Recipe


Oregano
1 Bay Leaf
Basil
Fresh Parsley
Garlic Powder
(1) Onion (or onion flakes or granules)
Salt and cracked pepper
Pinch of cayenne pepper
red pepper flakes
Garlic cloves, fresh if you have them
Olive Oil
Sugar -just a dash
(2) 28 oz. / (2) 800g Tomato Sauce
(2) 6 oz. / (2) 170g Tomato Paste, with equal parts water
small diced tomatoes, optional
Red Wine, just a splash
(1) Package of Italian Sausage (i like to combine mild and spicy)
sliced mushrooms, optional

Mix all together in a pan, bring to just a boil, stirring occasionally. Then, let simmer for a little while, then rest on low heat.

Can use ground beef for sausage if you don't have the italian sausage. Mixing the two together is good too.

Tastes even better the next day. :)

In my opinion, having a salad and some garlic bread with your spaghetti, you cannot go wrong. Good any day of the week.

One more thing, while I titled the blog spaghetti sauce, its really a tomato sauce that is good for any type of pasta, you name it, it will probably work. Pastas like Penne, Linguini, shells, angel hair, ziti, and more, are all good.
